Quinoa Salad

For lunch today, I experimented with quinoa. Yum.

Here was my concoction/recipe:

Saute portobello mushrooms in butter with minced garlic. Throw in grated carrot at the very end and saute about 30 seconds more. Rip up fresh spinach and toss in the warm mixture.

Cut up cucumber and toss with quinoa, mushroom mixture and add lemon juice, olive oil and soy sauce (or Braggs Liquid Aminos) to taste. I also added a grind of salt and pepper too.

Sorry, no pictures- but in my opinion it looked and tasted delicious and was super quick too!

That sounds yummy! I have quinoa, but don't really know what to do with it. I even asked Pillar and she said that all she knew was her grandma used to make a mush sort of thing with it. I will try your salad.

I can never get over how much quinoa tastes like bird seed. but i must try your recipe. all mine have never sufficiently covered up the bird seed taste. here's to cleaner eating!

Sounds yummy! - we use it and brown rice interchangeably (is that even a word?...it is now.)

didn't you also once tell me about a recipe for bulger wheat or cracked wheat, soaked and eaten in a lettuce wrap? Will you describe it again?

Yum, I love quinoa...and bulgar too. Sometimes I replace meat in recipes with bulgar or go half&half, if we are feeling like a meat in our dinner. I love bulgar for Tabbouleh...oh, yummy!! I'm hungry just thinking about it!
