For lunch today, I experimented with quinoa. Yum.
Here was my concoction/recipe:
Saute portobello mushrooms in butter with minced garlic. Throw in grated carrot at the very end and saute about 30 seconds more. Rip up fresh spinach and toss in the warm mixture.
Cut up cucumber and toss with quinoa, mushroom mixture and add lemon juice, olive oil and soy sauce (or Braggs Liquid Aminos) to taste. I also added a grind of salt and pepper too.
Sorry, no pictures- but in my opinion it looked and tasted delicious and was super quick too!

Grass for lunch
"Aaahhhh, grass. I love to sit in grass. It makes me a happy baby."
"Oh yes, and it tastes delicious too!"
"Finger licking good, in fact."
"Uuagh.. hack... hack.. cough cough. Ahem, excuse me! I think that went down the wrong pipe."
"Oops. Sometimes it sticks a bit to my face....."
"But back to what I was saying.... grass is a delectable treat!"
